Mark and I opened Chapters 7 years ago, we had known each other for just 2 years after we met in a restaurant in Hereford, I instantly fell in love with Marks food and he liked the way I served it.
We are both passionate about provenance, seasonality and hospitality and when the opportunity to open a space of our own came up we snapped it up. There were several moments during the planning stages that we did consider that we might be totally mad - choosing to move house at the same time as setting up was a bit bonkers, never mind the fact that we hadn’t lived together before! What could go wrong?
We are so proud of the restaurant that we have created in Hay-on-Wye, we have met the most wonderful people along the way, the producers that have supplied us with the most amazing ingredients, the people that have worked alongside us, the guests! But 7 years is a long time and as you know from joining us in the restaurant the way we operate is personal and intimate. You know that when you dine with us, Mark will be in the kitchen and I will always be there in the restaurant, this is an unusual set up but one that we think you all appreciated.
We are so happy with what we have achieved and delighted that we have had the honour of you all choosing to visit us - many of you repeatedly over the years and we thank you. But we have made decision that now is the time to hand over the reins of the meeting rooms at St Johns Chapel and for someone else to write the next chapter.
May 16th will be our last dinner service and we have the odd table left here and there over the next three weeks for any of you that would like to join us before we close.
On Friday 1st May we will be announcing who is going to take over the space and we would love it if you supported them as well have you have supported us.
Thank you to you all for everything over the years, your appreciation of Chapters means the world to us and we are so grateful for all the kind words and custom.

Summary
It has a Michelin Green Star for its excellence in sustainability, but Charmaine & Mark McHugo’s ‘Dining & Bottle Shop’ in the centre of town, attracted only limited feedback in our annual diners’ poll this year regarding its focused menu with many items sourced from the kitchen garden. Such as we have, though, says results are “consistently excellent” and the overall style “very personable and welcoming”.

“A lovely small restaurant” in a converted, ancient ecclesiastical building which bills itself as ‘Dining & Bottle Shop’, “where you can enjoy unusual flavours and be taken through the menu by the delightful staff”. All reports are enthusiastic about its approach, which includes sourcing from the venue’s own garden, delivering “amazing food” of diverse inspiration and “good value”. Foodwise, it was the highlight of the year for some reporters.

“Highly recommend if you are around Hay on Wye” – a “small but perfectly formed restaurant” which puts its emphasis on “very locally sourced dishes that are well prepared” from a “carefully-put-together tasting menu” (five courses for £60 per person) “with unexpected but lovely flavour combinations”.
