Vintage inn revived on Palé Hall estate

The owners of Palé Hall luxury hotel on the edge of Snowdonia national park have opened a gastropub with rooms at the end of their drive, following a £1 million makeover of a village inn dating back to 1695.

The Bryntirion Inn, near Bala in north Wales, is decorated throughout with classic car and motorsport memorabilia from the private collection of Anthony Cooper-Barney (pictured with his wife Donna), who acquired the Palé estate last year.

Bryntirion has a 60-cover dining room with a kitchen headed by chef Tristan Fitt, whose impressive CV takes in Raymond Blanc’s Le Manoir aux Quat’Saisons, the Lords of the Manor Hotel in the Cotswolds, Wheeler’s Oyster Bar in Whitstable and The Westbury in Mayfair. His menu features ‘elevated pub classics, championing the finest Welsh ingredients’, alongside a more casual plates in the bar like black pudding sausage roll with homemade brown sauce.

Anthony, a flamboyant property and retirement homes entrepreneur, and Donna bought Palé in April last year from former Vodafone MD Alan Harper, and plan to turn it into a destination resort.

This project is especially close to my heart – it has given me the perfect place to share my classic car memorabilia, while creating a true village pub where locals can feel at home. With Tristan leading the kitchen, we are proud to offer a food and drink experience rooted in local produce and quality.
