
Adam Byatt of Trinity in Clapham is to open an Italian neighbourhood restaurant overlooking Wandsworth Common, called Rosina after his daughter Rosie.
Rosina has taken over the corner site formerly occupied by Brinkley’s Kitchen – just a few doors along Bellevue Parade from Chez Bruce, which has for many years jousted with Trinity for the title of ‘best restaurant in South London’.
Adam’s most recently opening was Brasserie Constance at Fulham football ground, his homage to the great English mid-20th-century cook Constance Spry, which opened last year. He launched Trinity on the edge of Clapham Common 20 years ago, following up with Bistro Union in nearby Abbeville Road in 2012 and the more informal Trinity Upstairs in 2015.
In preparation for the launch of Rosina, Adam took his team – including Rosie – on a road trip across Italy, to explore the processes behind key ingredients including parmesan cheese, balsamic vinegar and mortadella.
He says, “The menu is a tribute to the most well-loved cuisine in the world, and I can’t wait to share it with this London neighbourhood.”
